Quinoa Patties

Another way to use quinoa and pack protein into your diet.


2 cups quinoa, cooked
1 cup cooked little black beans
½ cup shredded carrots
½ cup finely chopped parsley
2 eggs
salt and pepper to taste

To cook the quinoa, put 2 cups of quinoa in 3 cups of water in a pot and boil it.  It will be ready after it has boiled for 5 minutes.  Drain the remaining water and add the rest of the ingredients, including the 2 eggs (if the mix seems too dry, add another egg) in a bowl.  Make the patties and put them into a frying pan, one at a time.  You can use butter, non-stick spray or olive oil, whichever you prefer.  Turn them when the underside looks golden brown.
