Makes about 4 dozen cookies
- 3/4 cup soft margarine
- 1 cup brown sugar, loosely packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat flour
- 1.5 cups rolled oats
- 1 cup oat bran
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- chocolate chips
Cream together the margarine and sugar until light and creamy. Beat in the egg and vanilla.
Combine the flour, rolled oats, oat bran, baking soda and salt in a separate bowl. Stir into the creamed mixture and mix well. Stir in the chocolate chips.
Drop the dough in flattened teaspoonfuls onto a lightly oiled or paper-lined cookie sheet. Flatten slightly with a floured fork.
Bake at 350 F for 10-12 minutes or until golden brown. After taking cookies out of the oven wait one minute before removing cookies from the pan.
