Colourful Rice

My favourite rice to accompany the turkey recipe


4 cups of rice
2tbs. salt
2tbs. olive oil
1 cup leeks finely chopped
1 yellow pepper, finely chopped
1 red pepper, finely chopped
1 cup raisins
salt to taste

In a large pot cook the leeks with the oil and salt until soft.  Add the rice and let it cook for 10 minutes, counted after the water boils.  Immediately add the chopped peppers and the raisins.  If there are no allergies in the house, you can also add some chopped walnuts.  When the water is completely evaporated, take the pot off the stove.
