Buttercream Icing

This recipe will generously cover one 9×13 inch cake.


  • 1 cup of butter (be sure that it is at room temperature–very soft), or vegan butter substitute
  • approximately 5 cups of icing sugar
  • 1 tsp vanilla

put 1 cup of butter (or alternative) in a bowl. Beat with electric mixer until light and fluffy. Add vanilla, then add the icing sugar little by little until the mixture thickens up.

More or less icing sugar will be required depending on the temperature and humidity of the room. If too much sugar is added, the icing will be stiff. A few drops of milk or water could be added in this case.
